Serve these Bourbon Baked Beans on Derby Day or your next dinner party, and in no time your guests will exclaiming “Well, I declare”!
4 slices uncured bacon
2 cans of cannellini beans, drained and rinsed well
2 cans of pinto beans, drained and rinsed well
1 can peaches in natural juices, drained and chopped
3 garlic cloves, minced
½1/2 cup organic ketchup
½1/2 cup bourbon (or whiskey)
1/4¼ cup pure maple syrup (or molasses)
2 Tbsp. balsamic vinegar (or apple cider vinegar)
1 Tbsp. Dijon mustard (or whole grain mustard)
1 Tbsp. canned chipotle in adobo sauce (freeze the remaining for future use)
1 Tbsp. chili powder
1 tsp. paprika
1 tsp salt and black pepper
- Cook bacon in 375 degree oven on cooking sheet covered with parchment for about 25 min or until crispy. Set aside to cool.
- Combine all ingredients (except bacon) to slow cooker. Cover, set on low and cook for about 6 hours.
- Crumble and stir in cooked bacon into beans, and serve.
