1 head cauliflower cut into small florets
1 onion thinly sliced
3 garlic cloves, skins removed
1 teaspoon salt
1 can garbanzo beans, drained and rinsed
3 Tablespoons tahini
1 Tablespoon fresh lemon juice
3 tablespoons olive oil
1 teaspoon ground cumin
1 tsp. curry powder
4 slices Naan or pita bread
2 teaspoons pink peppercorns crushed
Fresh parsley & plain Greek yogurt for toppings
- Heat oven to 375 degrees. In a medium sized bowl, add first 10 ingredients. Stir well to combine.
- Place mixture on a cooking sheet, roast in oven for about 20 minutes.
- Serve on top of naan or pita with crushed pink peppercorns, parsley and a dollop of plain Greek yogurt.
