We’ve managed to keep up with our cucumber snacking until recently, where we simply have more than we can handle. I have gladly handed out a few to neighbors but the cukes keep coming.
2 Tbsp salt
1 cup sugar
1 ½ cups white distilled vinegar
1 1/2 tsp each: turmeric, mustard seed and celery seed
- Slice cucumbers to a thickness of your liking; place in bowl with salt. Allow to sit an hour, then rinse.
- In a separate bowl, stir together sugar, vinegar, turmeric, mustard seed and celery seed. Allow to also sit for an hour.
- Combine sugar mixture with cucumbers in a mason jar, leaving at least an inch headspace.
- Seal jar and freeze. When ready to enjoy, thaw a couple of hours ahead.
