Butternut is usually a bear to peel and cut, so I was thrilled to learn about the Culinary Cuts Butternut Zig-Zags. Be on the lookout for this new product in your market. If you cannot find in your store, cubed butternut squash would also work.
So as the month draws to a close, here are a few examples of food art done by Little Sprouts that are hoping March goes out like a lamb!
2 cups barley
2 cups Mann’s Culinary Cuts Butternut Zig-Zags (or cubed butternut squash)
1 can garbanzo beans, drained and rinsed
3/4¾ cup fresh parsley, chopped
2 scallions, thinly sliced
2 Tbsp. olive oil
1/2 cup walnuts
¼1/4 cup preserved lemon, chopped (if cannot find, add juice and zest of 1 lemon and 1 tsp. salt)
Black pepper, to taste
1. Cook barley according to package directions. Allow to cool then add to large bowl.
2. Soften squash by microwaving for about 2 minutes; allow to cool; add to barley.
3. Add remaining ingredients, toss to thoroughly combine. Serve slightly warm or chilled.
