Chai and Chia…these unusual sounding ingredients are wildly popular these days, but chances are most of us had never heard of either just a few years back. Both are favs of mine, the chai for the complex flavor resulting from so many combined spices and chia for the boost in nutrition.
With this month’s Recipe Redux theme being “Cooking with Tea”, I thought it might be fun to make a Chai and Chia Refrigerator Oatmeal. Steeping chai tea in warm milk infuses the perfect amount of cinnamon, cloves, cardamom, allspice, ginger and nutmeg into the oats. Honey adds natural sweetness and chia seeds add crunch, healthy omega-3 fats and LOTS of fiber.
Overnight oats are so easy to assemble the night before and are ready to grab-and-go the next morn. I like to make a few jars at a time so that I’m set for breakfast the next few days.

The flavor combos are endless, but one thing is for sure- eating refrigerator oatmeal will certainly get you up and going in the morning in more ways than one!

Chai and Chia Refrigerator Oatmeal
1/4 cup rolled oats (Shirk's Country Market, Centertown, MO)
1 Tbsp. honey (Bekemeier's, Neosho, MO)
1 Tbsp. chia seeds
½ cup milk (I used coconut milk)
1 chai tea bag
- In a small jar with a lid, add oats, honey and chia.
- Heat milk in a microwavable mug for about 1 minute.
- Add tea bag and steep for about 2 minutes. Pour over ingredients in jar.
- Screw on lid, shake well and refrigerate for at least 8 hours. Enjoy chilled.
