This past Thursday evening, I had the opportunity to get a behind-the-scenes look at a very innovative, new establishment in the heart of St. Louis.
Paul & Wendy Hamilton of Hamilton Hospitality are restaurateurs with a proven track record of opening several successful restaurants in the city of Saint Louis. There is little doubt their latest venture will be anything but great. In collaboration with Charleville Vineyard and Microbrewery, the Charleville Brewing Co. & Tavern is expected to open its doors sometime in May. The tavern decor has an urban rustic flair and a welcoming open floor plan. Large vessels for brewing beer are handsomely displayed behind the bar.
Touring the soon-to-be tavern was terrific, but for me, the really exciting part of the tour took place in the parking lot. Outside the doors of the new Charleville Brewing Co. & Tavern and adjacent Vin de Set, is where the incredible Hamilton Farms greenhouse resides. Numerous aeroponic Tower Gardens overflow with multiple varieties of fresh greens. Tower gardening takes urban farming to a whole new level (or should I say heights!). It is truly remarkable that with limited space, in the middle of St. Louis City, this small but mighty greenhouse is able to supply all the Hamilton Hospitality restaurants with an abundance of kale, lettuce, herbs, fennel, etc. for use on the menus!
During a short presentation, we learn that in addition to the Tower Garden, Hamilton Farms also keep bees for honey, raise chickens for eggs, and have a fruit orchard, all of which is incorporated into the menus of all the Hamilton Hospitality restaurants- simply amazing! Future plans include offering tower-to-table events in the Hamilton Farms greenhouse space, as well as potentially opening a commissary where produce, honey, eggs, could be sold directly to the public.
