This month’s Recipe Redux challenges us to try a new ingredient for the New Year.
What will you try?
4 sweet potatoes, scrubbed clean
4 slices prosciutto
2 garlic cloves, minced
1/4 tsp. red pepper flakes
1/2 cup part-skim ricotta cheese
1 ½ Tbsp. grated Parmesan cheese
1 Tbsp. each fresh basil and parsley, chopped (could also add chives, thyme, oregano)
- Prick sweet potatoes with fork, microwave on high 4-5 minutes until tender. Allow to cool slightly.
- Place 2 slices prosciutto on a paper towel, cover with another paper towel, and microwave on high for 1 minute. Remove top paper towel, allow to cool and become crispy. Repeat with other slices.
- Meanwhile in a small bowl, combine ricotta, Parmesan, garlic, pepper flakes and chopped herbs. Stir to combine.
- Split open each sweet potato, top with herbed ricotta and crumbed prosciutto.
